The Black Velvet is half stout and half Champagne, served in a flute. Rich, dry and elegant, it has been a celebration drink since the 1860s.

Ingredients

  • 75ml chilled stout
  • 75ml chilled Champagne or dry sparkling wine

Method

  1. Stout first: Pour the stout into a Champagne flute until it is half full.
  2. Layer: Slowly pour the Champagne over the back of a spoon on top.
  3. Serve: Serve straight away.

Tips for the Perfect Black Velvet

  • Cider is a popular, cheaper swap for the Champagne (sometimes called a Poor Man's Black Velvet).
  • Pour slowly so the stout's head doesn't foam over.
  • Make sure both are well chilled.

A Bit of History

It is said to have been created at Brooks's Club in London in 1861, as a mark of mourning for Prince Albert, Queen Victoria's husband.
