Ingredients
1.5 oz (45ml) Apple Brandy (Calvados or Applejack)
0.75 oz (22.5ml) Homemade Rhubarb Syrup
0.25 oz (7.5ml) Ginger Liqueur (e.g., Domaine de Canton)
0.5 oz (15ml) Fresh Lemon Juice
2-3 oz (60-90ml) Chilled Sparkling Rosé Wine
Ice
For Garnish: A thin rhubarb ribbon or slice, fresh mint sprig
Instructions
Chill Your Glass: Start by chilling a highball glass or a large wine glass. You can do this by filling it with ice and a splash of water, letting it sit for a few minutes, then discarding.
Combine Ingredients: In a cocktail shaker, combine the apple brandy, rhubarb syrup, ginger liqueur, and fresh lemon juice.
Shake It Up: Fill the shaker with fresh ice. Secure the lid and shake vigorously for about 10-15 seconds until the mixture is well-chilled.
Strain and Top: Strain the contents of the shaker into your chilled glass filled with fresh ice.
Add Fizz: Top generously with the chilled sparkling rosé wine.
Garnish and Serve: Gently stir to combine. Garnish with a delicate rhubarb ribbon or a thin slice, and a fresh sprig of mint for an aromatic touch. Serve immediately and enjoy!
Tips for Perfection
Homemade Rhubarb Syrup: To make your own, combine 1 cup chopped rhubarb, 1 cup sugar, and 1 cup water in a saucepan. Bring to a simmer, stirring until sugar dissolves. Let it cook for 10-15 minutes until rhubarb is very soft. Strain through a fine-mesh sieve, pressing on solids to extract all liquid. Let cool completely before use. Store in the fridge for up to 2 weeks.
Quality Matters: Using a good quality apple brandy and sparkling rosé will significantly elevate the flavour of your cocktail.
Fresh Lemon Juice: Always use freshly squeezed lemon juice for the best, brightest flavour. Bottled juice simply doesn't compare.
Garnish with Flair: A rhubarb ribbon can be made by peeling a thin strip of rhubarb with a vegetable peeler. It adds an elegant touch and a subtle aromatic note.
Variations
Ginger Kick: For a more pronounced ginger flavour, you could muddle a small slice of fresh ginger in the shaker before adding other ingredients and ice.
Berry Bliss: Add a few fresh raspberries or strawberries to the shaker with the other ingredients for an extra fruity dimension.
Non-Alcoholic Fizz (Mocktail): Omit the apple brandy and ginger liqueur. Instead, use a non-alcoholic apple cider or sparkling grape juice, a little extra rhubarb syrup, lemon juice, and top with sparkling water or non-alcoholic rosé.
