Ingredients
300g penne pasta
2 x 160g cans tuna in spring water or olive oil, drained
1/2 cup (approx. 120g) good quality mayonnaise
1 tablespoon red wine vinegar
1/4 cup finely diced red onion (optional, for extra crunch and flavour)
1 stalk celery, finely diced (optional, for extra crunch)
Salt to taste
Freshly ground black pepper to taste
Fresh parsley or chives, chopped, for garnish (optional)
Instructions
Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the penne pasta and cook according to package directions until al dente. Drain well and rinse briefly with cold water to stop the cooking process and cool the pasta. This is important for a pasta salad.
Prepare the Tuna Mixture: While the pasta cooks, flake the drained tuna into a medium-sized mixing bowl. Add the mayonnaise, red wine vinegar, diced red onion (if using), and diced celery (if using).
