Miso Glazed Cod with Sesame Greens
Bring miso glazed cod with sesame greens to the table for something different alongside a drink. The recipe balances flavour and texture using straightforward techniques and measured ingredients. Serves 4. Have everything ready before you start, follow the cooking and cooling times below, and pour a small glass of Rice Lager when the food is ready.
Ingredients
Serves 4
4 cod fillets, about 150 g each
2 tbsp white miso
1 tbsp honey
1 tbsp rice vinegar
300 g pak choi
1 tbsp sesame oil
1 tsp sesame seeds
250 g jasmine rice
Instructions
Heat oven to 210°C, 190°C fan. Cook rice following packet and keep covered.
Mix miso, honey and vinegar. Pat cod dry, place on a lined tray and spread glaze over it.
Roast for 12–15 minutes until fish flakes and centre reaches 63°C, allowing longer for thick fillets.
Halve pak choi and stir-fry in sesame oil for 3–4 minutes. Serve with cod, rice and sesame seeds.
Serving Suggestions
Divide between warmed plates or bowls and serve with the accompaniments prepared in the method. The recipe makes a complete main course for the stated number of people.
Pairing Tips
Start with Rice Lager. A light body and crisp finish offer a clean contrast to soy, sesame and aromatic seasoning. Serve a modest measure so the drink supports the food. An alcohol-free beer in a similar style is also an option; choose one with a comparable balance of sweetness and bitterness.
