Serves 8 as a starter. Have everything ready before you start, follow the cooking and cooling times below, and pour a small glass of Witbier when the food is ready.

Ingredients

Serves 8 as a starter

  • 500 g frozen peas

  • 1 onion, chopped

  • 1 tbsp olive oil

  • 650 ml vegetable stock

  • 15 g mint leaves

  • 100 g Greek yoghurt

  • 1 lemon

  • 1/4 tsp black pepper

Instructions

  1. Soften onion in oil over medium heat for 8 minutes until translucent.

  2. Add stock and bring to a boil, then add peas and simmer for 4 minutes.

  3. Remove from heat, add mint and blend carefully until smooth, working in batches if necessary.

  4. Stir in 1 tbsp lemon juice and pepper. Divide between small cups and finish with yoghurt.

Serving Suggestions

Serve as a starter or part of a sharing spread, using the temperature and accompaniments in the method. Set out small plates and let guests help themselves.

Pairing Tips

Start with Witbier. Citrus peel and coriander notes echo fresh herbs and lemon, while soft wheat character avoids overwhelming the food. Serve a modest measure so the drink supports the food. An alcohol-free beer in a similar style is also an option; choose one with a comparable balance of sweetness and bitterness.
