Smashed Cucumber with Sesame and Garlic
Bring smashed cucumber with sesame and garlic to the table for something different alongside a drink. The recipe balances flavour and texture using straightforward techniques and measured ingredients. Serves 4. Have everything ready before you start, follow the cooking and cooling times below, and pour a small glass of Rice Lager when the food is ready.
Ingredients
Serves 4
2 cucumbers
1/2 tsp salt
2 tbsp rice vinegar
1 tbsp soy sauce
1 tsp sesame oil
1 garlic clove, grated
1 tsp caster sugar
1 tbsp sesame seeds
Instructions
Gently bash cucumbers on a board with a rolling pin until cracked and cut into bite-sized pieces.
Toss with salt in a sieve and drain for 20 minutes, then pat dry.
Whisk vinegar, soy, sesame oil, garlic and sugar until sugar dissolves.
Toss cucumber with dressing and sesame just before serving. Serve cold for freshest crunch.
Serving Suggestions
Serve alongside a grilled, roasted or vegetarian main, allowing the stated number of side portions. Bring to the table warm or chilled as directed in the method, rather than leaving it out for long periods.
Pairing Tips
Start with Rice Lager. A light body and crisp finish offer a clean contrast to soy, sesame and aromatic seasoning. Serve a modest measure so the drink supports the food. An alcohol-free beer in a similar style is also an option; choose one with a comparable balance of sweetness and bitterness.
