Creamed Spinach with Garlic and Nutmeg
Bring creamed spinach with garlic and nutmeg to the table for something different alongside a drink. The recipe balances flavour and texture using straightforward techniques and measured ingredients. Serves 4. Have everything ready before you start, follow the cooking and cooling times below, and pour a small glass of Helles Lager when the food is ready.
Ingredients
Serves 4
600 g spinach
25 g butter
2 garlic cloves, crushed
150 ml double cream
1/4 tsp nutmeg
1/4 tsp salt
Instructions
Wash spinach and wilt in a covered pan in two batches for 2–3 minutes. Drain, cool slightly and squeeze dry.
Chop spinach roughly. Melt butter and cook garlic gently for 1 minute.
Add cream and nutmeg and simmer for 3 minutes until slightly thickened.
Stir in spinach and salt and heat for 2 minutes until piping hot. Serve immediately.
Serving Suggestions
Serve alongside a grilled, roasted or vegetarian main, allowing the stated number of side portions. Bring to the table warm or chilled as directed in the method, rather than leaving it out for long periods.
Pairing Tips
Start with Helles Lager. Soft bready malt and a clean finish let the seasoning lead, making this an easy match for a sharing table. Serve a modest measure so the drink supports the food. An alcohol-free beer in a similar style is also an option; choose one with a comparable balance of sweetness and bitterness.
