Peas with Baby Gem and Mint

Bring peas with baby gem and mint to the table for something different alongside a drink. The recipe balances flavour and texture using straightforward techniques and measured ingredients. Serves 4. Have everything ready before you start, follow the cooking and cooling times below, and pour a small glass of Golden Ale when the food is ready.

Ingredients

Serves 4

  • 400 g frozen peas

  • 2 baby gem lettuces, quartered

  • 25 g butter

  • 4 spring onions, sliced

  • 100 ml gluten-free vegetable stock

  • 15 g mint, chopped

  • 1 lemon, zested

Instructions

  1. Melt butter in a wide lidded pan and soften spring onions for 2 minutes.

  2. Put lettuce cut-side down in pan and cook for 2 minutes until lightly coloured.

  3. Add peas and stock, cover and simmer for 4–5 minutes until tender.

  4. Uncover for 1 minute to reduce liquid and fold in mint and zest. Serve straight away.

Serving Suggestions

Serve alongside a grilled, roasted or vegetarian main, allowing the stated number of side portions. Bring to the table warm or chilled as directed in the method, rather than leaving it out for long periods.

Pairing Tips

Start with Golden Ale. Light biscuit malt and gentle citrus hops suit savoury herbs and crisp textures without overpowering them. Serve a modest measure so the drink supports the food. An alcohol-free beer in a similar style is also an option; choose one with a comparable balance of sweetness and bitterness.
