Classic Tomato & Basil Bruschetta
A vibrant and fresh Classic Tomato & Basil Bruschetta recipe, perfect as an appetizer. Its bright flavours are an ideal companion to a crisp, refreshing beer or a light white wine.

Ingredients
- 1 large baguette or ciabatta loaf, sliced into 1/2-inch thick pieces
- 4-5 ripe large tomatoes (e.g., Roma or beefsteak), finely diced
- 3 cloves garlic, minced (divided)
- 1/4 cup fresh basil leaves, thinly sliced (chiffonade), plus extra for garnish
- 1/4 cup extra virgin olive oil, plus extra for drizzling
- 1 tablespoon balsamic glaze (optional, for drizzling)
- Salt, to taste
- Freshly ground black pepper, to taste
Instructions
- Prepare the Bread: Preheat your oven to 180°C (350°F) or a grill to medium heat. Arrange the bread slices on a baking sheet. Lightly brush one side of each slice with a little extra virgin olive oil. Toast in the oven for 5-7 minutes, or on the grill for 2-3 minutes per side, until golden brown and slightly crispy. Alternatively, use a toaster.
- Rub with Garlic: Once the bread is toasted, immediately rub one side of each warm slice with a cut raw garlic clove (or a little of the minced garlic). This infuses a subtle garlic flavour into the bread.
- Prepare the Tomato Topping: In a medium bowl, combine the finely diced tomatoes, the remaining 2 cloves of minced garlic, and the thinly sliced fresh basil.
- Season the Topping: Drizzle the 1/4 cup of extra virgin olive oil over the tomato mixture. Season generously with salt and freshly ground black pepper. Gently toss everything together to combine.
- Assemble the Bruschetta: Spoon a generous amount of the tomato and basil mixture onto each toasted bread slice.
- Garnish and Serve: Arrange the bruschetta on a serving platter. Garnish with a few extra basil leaves and, if desired, a light drizzle of balsamic glaze. Serve immediately.
Serving Suggestions
Bruschetta is best served fresh, while the bread is still slightly warm and crispy. It makes a fantastic starter for any meal or a delightful snack for a gathering. For an extra touch, you could add a sprinkle of finely grated Parmesan cheese (though this would change the dietary tags).
Pairing Tips
The fresh, vibrant flavours of tomato and basil in this bruschetta make it incredibly versatile for drink pairings. For beer lovers, a crisp, clean lager like a German Pilsner or a light Italian Lager would be excellent. Their subtle bitterness and effervescence cut through the olive oil and complement the acidity of the tomatoes. A light-bodied Pale Ale or a refreshing Wheat Beer (Hefeweizen) would also work beautifully, offering fruity or spicy notes that enhance the basil. If you're leaning towards wine, a dry, crisp Sauvignon Blanc, an Italian Pinot Grigio, or a sparkling Prosecco would be fantastic choices. For spirits, a Gin & Tonic with a fresh basil garnish would echo the dish's herbal notes.
