Best beer with curry

A curry is not one dish. A coconut korma, a tomato Madras and a bhuna with a fried onion base pull a drink in different directions. They share chilli, some fat, and a lot of spice aroma. The beer has to clear your palate between bites without wiping that aroma out.

Cold temperature and carbonation do most of the work. Bubbles scrub oil and capsaicin off the tongue. Keep the strength modest: ethanol dissolves capsaicin, so a strong beer can make a hot curry feel hotter. Moderate bitterness cleans the palate. A very bitter beer and a very hot sauce just shout at each other.

Beer styles that work

  • Cold lager or pilsner

    Low flavour, high fizz, served cold. It does not compete with garam masala or fenugreek, and the bubbles lift the fat in a creamy sauce. This is the best beer with a hot Madras or vindaloo. Look for something dry and around 4 to 5% ABV, not a sweet or malty lager.

  • Pale ale or a moderate IPA

    Hop bitterness stands up to onion, tomato and fried spice in a bhuna or jalfrezi. Citrus hops can echo coriander. Stop before the beer turns into a fruit juice: a hazy, very hoppy IPA fights the spice mix instead of framing it. Aim for a firm bitter finish rather than a high alcohol one.

  • Wheat beer, for milder curries

    A korma or butter-style curry is about cream, sugar and spice more than raw heat. Wheat beer has body, a soft bitterness, and often a clove or banana note that sits next to those spices. The carbonation still cuts the coconut or dairy. It is a poor match for a very hot chilli sauce.

Gin and tonic

Quinine bitterness and lime or lemon do the same job as a bitter lager: they reset the palate and lift fat. Use plenty of ice and citrus. A sweet, strong cocktail will carry the chilli and make the next mouthful hotter.

Sparkling water, fresh lime and a pinch of salt. The fizz and acid cut through oil, and the salt changes how you notice the heat. Ginger beer is the other good alcohol-free pour: the ginger stands beside the spice instead of arguing with it. Skip sugary fruit juice with a hot curry. Sugar and chilli amplify each other.
