Beer with fried chicken

Fried chicken is a crisp crust, juicy meat, and salt. Sometimes paprika or cayenne. Sometimes a sweet glaze. The crust is the thing the drink has to handle. Without carbonation, the fat in the coating builds up and the third piece tastes dull.

A cold lager is the straightforward answer, and it is the right one most of the time. Move away from it only for a reason: a pale ale if you want hops with a peppery coating, a wheat beer if the chicken is hot and you need something gentler than an IPA. The mistake is treating hot fried chicken like a curry and pouring the bitterest beer you have. Chilli plus intense bitterness feels abrasive.

Beer styles that work

  • Cold lager

    High fizz, low sweetness, served cold. It cuts the crust and the salt and lets the chicken taste like chicken. The best beer with plain or lightly seasoned fried chicken, and with a katsu-style cutlet where the sauce is already doing a lot of flavour work. A sweet lager makes the crust taste greasy.

  • Pale ale

    Useful when the coating is peppery, herby or garlicky and you want the drink to answer back a little. Moderate bitterness scrubs the fat. Keep the hop character herbal or citrus rather than a thick juice, which sits on the crust instead of cutting it.

  • Wheat beer, when the chicken is hot

    If the coating is genuinely chilli-hot, step away from high bitterness and high alcohol. A cold wheat beer has the bubbles to cut the crust and a softer finish that does not stack on the burn. Same rule as other spicy food: strength makes the heat worse.

A long whisky and ginger beer. Ginger matches pepper in the coating, and the length of the drink keeps it refreshing. Better with seasoned or glazed chicken than with a plain katsu curry sauce, where a lager or even a lime soda will be cleaner.

Lemonade or ginger beer

Fizzy lemonade is the simple crust-cutting soft drink, acid plus bubbles. Ginger beer is better when the chicken is spicy or heavily peppered. Both cold. A thick milkshake is a side, not a palate cleanser, and it will mute the crust.
