Crispy Rice Nori Bites

Bring crispy rice nori bites to the table for something different alongside a drink. The recipe balances flavour and texture using straightforward techniques and measured ingredients. Serves 8. Have everything ready before you start, follow the cooking and cooling times below, and pour a small glass of Rice Lager when the food is ready.

Ingredients

Serves 8

  • 250 g sushi rice

  • 350 ml water

  • 1 tbsp rice vinegar (check the label is gluten-free)

  • 1 tsp caster sugar

  • 1/4 tsp salt

  • 2 nori sheets

  • 2 tbsp oil

  • 1 tbsp sesame seeds

Instructions

  1. Rinse rice thoroughly and cook with measured water following packet. Leave covered off heat for 10 minutes.

  2. Stir vinegar, sugar and salt into rice. Press 1 cm thick in a lined 20 x 25 cm tin, cool quickly within 1 hour and refrigerate until firm.

  3. Cut into 16 squares and fry in oil over medium heat for 4 minutes each side until crisp and piping hot.

  4. Wrap a narrow nori strip around each and sprinkle with sesame. Eat immediately, using refrigerated cooked rice within 24 hours.

Serving Suggestions

Serve in small bowls or on a sharing board. Crisp snacks are best freshly made, while chilled snacks should stay refrigerated until just before serving. Follow the storage guidance in the method.

Pairing Tips

Start with Rice Lager. A light body and crisp finish offer a clean contrast to soy, sesame and aromatic seasoning. Serve a modest measure so the drink supports the food. An alcohol-free beer in a similar style is also an option; choose one with a comparable balance of sweetness and bitterness.
