Smoked Almond and Apricot Trail Mix

Bring smoked almond and apricot trail mix to the table for something different alongside a drink. The recipe balances flavour and texture using straightforward techniques and measured ingredients. Serves 8. Have everything ready before you start, follow the cooking and cooling times below, and pour a small glass of Brown Ale when the food is ready.

Ingredients

Serves 8

  • 200 g almonds

  • 100 g dried apricots, chopped

  • 80 g pumpkin seeds

  • 1 tbsp olive oil

  • 1 tsp smoked paprika

  • 1/2 tsp sea salt

Instructions

  1. Heat oven to 180°C, 160°C fan. Toss almonds and seeds with oil.

  2. Spread on a tray and roast for 10–12 minutes, stirring halfway, until fragrant.

  3. Toss hot nuts with paprika and salt and spread out to cool completely.

  4. Mix in apricots only when cold. Store airtight for up to 1 week and serve in small bowls.

Serving Suggestions

Serve in small bowls or on a sharing board. Crisp snacks are best freshly made, while chilled snacks should stay refrigerated until just before serving. Follow the storage guidance in the method.

Pairing Tips

Start with Brown Ale. Nutty, gently caramelised malt picks up roasted flavours and warm spices without the sharpness of a heavily hopped beer. Serve a modest measure so the drink supports the food. An alcohol-free beer in a similar style is also an option; choose one with a comparable balance of sweetness and bitterness.

What to drink with this

Roast malt echoes the crust on a steak. An amber ale or bitter cuts the fat. Save a very strong beer for the last few bites, not the whole plate.
