Miso Butter Corn Ribs
Bring miso butter corn ribs to the table for something different alongside a drink. The recipe balances flavour and texture using straightforward techniques and measured ingredients. Serves 4. Have everything ready before you start, follow the cooking and cooling times below, and pour a small glass of Helles Lager when the food is ready.
Ingredients
Serves 4
4 corn cobs
40 g butter, softened
1 tbsp white miso
1 lime
1 tbsp sesame seeds
1 tbsp oil
Instructions
Heat oven to 220°C, 200°C fan. Carefully quarter cobs lengthways on a stable board using a sturdy knife. If too hard to cut safely, leave whole.
Brush with oil and roast for 25–30 minutes, turning once, until tender and charred at edges.
Mix butter, miso and lime zest. Brush over hot corn and return to oven for 2 minutes.
Scatter with sesame and serve with lime wedges. Eat kernels and discard hard centres.
Serving Suggestions
Serve in small bowls or on a sharing board. Crisp snacks are best freshly made, while chilled snacks should stay refrigerated until just before serving. Follow the storage guidance in the method.
Pairing Tips
Start with Helles Lager. Soft bready malt and a clean finish let the seasoning lead, making this an easy match for a sharing table. Serve a modest measure so the drink supports the food. An alcohol-free beer in a similar style is also an option; choose one with a comparable balance of sweetness and bitterness.
