Raspberry Eton Mess

Bring raspberry eton mess to the table for something different alongside a drink. The recipe balances flavour and texture using straightforward techniques and measured ingredients. Serves 4. Have everything ready before you start, follow the cooking and cooling times below, and pour a small glass of Raspberry Lambic when the food is ready.

Ingredients

Serves 4

  • 300 g raspberries

  • 300 ml double cream

  • 4 meringue nests, about 100 g

  • 1 tbsp icing sugar

  • 1 tsp vanilla extract

Instructions

  1. Mash half the raspberries with sugar into a rough sauce.

  2. Whip cream and vanilla to soft peaks, stopping before stiff or grainy.

  3. Break meringue into bite-sized pieces and fold three quarters into cream with whole raspberries.

  4. Ripple in sauce and spoon into glasses, topping with remaining meringue. Assemble just before serving for crunch.

Serving Suggestions

Allow the full cooling, setting or freezing time in the method before serving. Cut or scoop modest portions after a meal and keep chilled ingredients refrigerated until needed.

Pairing Tips

Start with Raspberry Lambic. Raspberry aroma links directly with the fruit. Choose a sweeter fruit beer so the cream and meringue do not make it taste harsh. Serve a modest measure so the drink supports the food. An alcohol-free beer in a similar style is also an option; choose one with a comparable balance of sweetness and bitterness.
