Ingredients
For the Chicken Tikka:
300g boneless, skinless chicken breast, cut into 1-inch cubes
1/2 cup (120g) Greek yogurt
1 tbsp ginger-garlic paste
1 tbsp lemon juice
1/2 tsp turmeric powder
1 tsp garam masala
1 tsp cumin powder
1 tsp coriander powder
1/2 tsp Kashmiri red chili powder (for colour and mild heat, adjust to taste)
1/2 tsp salt, or to taste
1/4 tsp black pepper
1 tbsp vegetable oil, for cooking
For the Garlic Bread:
1 large ciabatta loaf or a crusty baguette (approx. 30-40cm long)
60g unsalted butter, softened
3 cloves garlic, minced
2 tbsp fresh parsley, finely chopped
Pinch of salt
For Assembly:
1 cup (approx. 100-120g) mozzarella cheese, shredded
Instructions
1. Prepare the Chicken Tikka:
In a medium bowl, combine the Greek yogurt, ginger-garlic paste, lemon juice, turmeric powder, garam masala, cumin powder, coriander powder, Kashmiri red chili powder, salt, and black pepper. Mix well to form a smooth marinade.
Add the chicken cubes to the marinade, ensuring each piece is fully coated. Cover the bowl and refrigerate for at least 30 minutes, or ideally 2-4 hours for best flavour.
Heat 1 tablespoon of vegetable oil in a large non-stick pan or cast-iron skillet over medium-high heat.
Add the marinated chicken to the hot pan in a single layer, ensuring not to overcrowd the pan (cook in batches if necessary).
Cook for 5-7 minutes, turning occasionally, until the chicken is cooked through, lightly charred, and the marinade has reduced and coated the chicken beautifully. Remove from heat and set aside.
2. Make the Garlic Bread:
Preheat your oven to 200°C (180°C fan/Gas Mark 6).
Slice the ciabatta loaf horizontally through the middle, creating two halves.
In a small bowl, combine the softened butter, minced garlic, chopped parsley, and a pinch of salt. Mix until well combined.
Generously spread the garlic butter mixture evenly over the cut sides of both ciabatta halves.
Place the buttered bread halves onto a baking tray. Bake for 5-7 minutes, or until the edges are golden brown and the garlic butter is fragrant and bubbling. Remove from the oven.
3. Assemble and Cook the Sandwich:
Carefully spoon the cooked chicken tikka evenly over one half of the garlic bread.
Sprinkle the shredded mozzarella cheese generously over the chicken tikka.
Place the other half of the garlic bread on top, buttered side down (or up, if you prefer extra crispiness on top).
Return the assembled sandwich to the baking tray. Bake for another 8-10 minutes, or until the cheese is completely melted and bubbly, and the bread is golden and crusty.
Optionally, you can finish it under a hot grill for 1-2 minutes to get extra browning on the cheese, watching carefully to prevent burning.
