Beer with seafood

Prawns, mussels, crab and oysters taste of brine, sometimes butter, sometimes chilli and garlic. They are easy to bury. A beer with a huge hop aroma or a lot of residual sugar sits on top of them and the sea disappears. Dry, bitter in a modest way, and well carbonated is the pattern.

Oysters are the famous exception. A dry stout beside a raw oyster is a classic because roast bitterness and brine sharpen each other. That trick does not transfer to a plate of buttered prawns or a creamy chowder, where the same stout feels muddy. Match the beer to the shellfish in front of you, not to the word seafood.

Beer styles that work

  • Pilsner

    Dry, bitter, sparkling, often with a mineral edge. The best beer with prawns, grilled white fish and a seafood platter that is more brine than sauce. It behaves a bit like a squeeze of lemon. A sweet lager does not. Serve it cold.

  • Wheat beer

    The mussel beer. Higher carbonation cuts butter and cream, and a soft spice note can sit next to garlic and white wine in the pot. Also a good call for crab with mayonnaise. Low hop bitterness keeps the shellfish sweet rather than metallic.

  • Dry stout, with oysters

    Roast and a clean bitter finish against cold brine. Pour it with raw oysters or a simple oyster stew, not with a chilli prawn dish and not with a cheese-topped gratin. The stout should be dry. A sweet chocolate stout turns the oyster into dessert.

Gin and tonic

Cold, bitter and citrus-led. It is the non-beer drink that behaves most like a pilsner next to shellfish. A short, very strong martini-style drink also meets oysters, but it is a lot of alcohol for a first course. The long gin and tonic is the more useful glass.

Sparkling water with lemon

Cold sparkling water and a wedge of lemon. Salt and brine do not need sugar. A sweet soft drink makes prawns and mussels taste flat. If you want flavour, add lemon, not cordial.
